Chinese Cabbage Salad

Ingredients

  • 1 large (approx 3 lb.) head cabbage
  • 6 green onions
  • 1 pkg. oriental instant noodle (any flavor)
  • 1/4 cup sugar
  • 1/2 cup salad oil
  • 1 tsp sesame oil (optional)
  • 6 tbsp white wine vinegar
  • 1 tbsp soy sauce
  • 1/2 tsp pepper
  • 1/4 cup toasted sesame seeds

Instructions

  1. Finely shred the cabbage; you should have 3 quarts.
  2. Cut the green onions (including some of the tops) into thin diagonal slices.
  3. In a large salad bowl combine the shredded cabbage and the green onions.
  4. Break the uncooked oriental noodles (save the seasoning for other uses) into small pieces and mix into the cabbage.
  5. For the dressing, stir together the sugar, salad oil, sesame oil (if used) vinegar, soy sauce and pepper. Pour over cabbage mixture and toss well.
  6. Cover and chill 2 to 4 hours until wilted.
  7. Stir before serving. Sprinkle with sesame seeds.
